breakfast for dinner

Keeping it simple with breakfast for dinner 
Guess which plate it mine and which is Ryan's 

I made the pancakes without eggs and milk; instead I used yogurt and water. They came out great too. Light and fluffy just the way we like them. To get even healthier, instead of using pam or butter to coat the pan I used coconut oil. You just have to use the smallest of small amounts, if you use too much you will end up with a mush for a pancake. 

Try it and tell me how they came out!

If you haven't noticed yet, I am a total sales shopper. These jeans are the only designer jeans that I have, and I payed a total of $20 for them. I got them my sophomore year of high school and still wear them all the time. Jeans are hard to come by for me so I don't mind splurging a little bit, but these are by far my favorite. The belt was also a splurge, but it's lasted me probably 4 years so far and still holding up fairly well.

One of my favorite places to shop is my mothers closet. She is my inspiration in almost everything that I do. When  I went home for spring break one of the first things that I did was run into her closet and take a deep breath. There is just something about her smell that is just an instant comfort. My mom has 3 tons worth of big comfy sweaters, so I picked one that big and soft one and threw it on. When I came out my mom smiled and asked me why I picked that sweater. I just shrugged and said because it smelled like you. She laughed and told me that her mom, my grandmother, had wanted to learn to knit so she made this sweater as her first big project. My mom said the reason she took it from her mom was because it had smelled like her! I love this sweater so much, not only because it is all silk so naturally soft and cuddly, but because I know that my grandmother knit it and both her and my mother have worn it. I love that it is kind of lopsided and one sleeve is much longer than the other, it gives it character. I can't wait to pass it down to my daughter one day too. 

caffeine college

Maybe it's because I'm in college that I find myself up at crazy hours of the night and always seem to have some sort of homework or task that needs to be done. Yet even with as much free time as I have with my schedule,  I still find myself not having enough time to get everything done. So I did the most logical thing I could think of ... I turned into a coffee addict. Correction .... a coffee snob. 



Though I am a almost a member of the Starbucks Gold card club, there is something about the local cafes that just call to me. There are a few that make great coffees that I would love more than anything to work at. Until then though, I have made it my mission to learn how to brew the perfect cup of jo. For my birthday I got a french press, that I highly recommend to everyone. It's simple, easy to use, and works like a charm every time. (Oh,  and it doubles to brew free leaf teas too) I make all my own syrups, steam and froth my milk; I can make flavored lattes or just a great cappuccino. I would venture to say that I am getting pretty darn good! 




I decided to take it to the next step though. I've been a little down lately and everyone around me keeps treating themselves to these beautiful things. Why shouldn't I?! Generally, I try to avoid shopping to make myself feel better, because it usually ends up in debt and a bunch of things that I don't want, but I decided to do it this time. SO, I went to amazon and bought myself a cheap espresso maker so I can better master my skills. I'm super excited :)) stay tuned for new pictures and maybe even a little latte art! 


One step closer to my dream of opening up my own coffee shop one day. 
Now all I need is a job.
